The 'Perle Noire' is a Blanc de Noirs (white wine produced from red grapes) sparkling wine. It is made by the 'méthode traditionnelle', the same method as in Champagne. The grapes were lightly pressed and the two varieties of Pinot Noir and Gamay vinified separately. The individual parcels of wine were blended, then the 'liqueur de tirage' of sugar and yeast was added, before the wine was bottled ready for the second fermentation. The bottles were aged for a minimum 15 months before 'degorgement' at 12ºC. The bottles were then topped up with a 'liqueur de dosage', to give a residual sugar level of 12 grams per litre.
Distinctive pale pink in colour with a fine, elegant mousse and red fruit aromas on the nose. On the palate the wine has excellent weight, balance and complexity, and represents superb value for money.
